I've never been the biggest pancake lover as i've always found them to be too sweet (surprisingly) but I saw a recipe for these delicious looking pancakes on Instagram and decided to try them out.
These are probably the easiest pancakes to make and sooo delicious, especially with the toppings!
I was worried about whether the mixture would come to the right consistency but it was perfect, a bit thicker than normal pancakes but they cook really well.
I made them quite small, probably the size of my palm and had quite a few left over.
Recipe:
1 Cup Oats
1 Cup nut mylk
1 Large banana
Yep thats all you need! Just place the cup of oats into a food processor and blend it until it becomes a flour consistency then add in the nut mylk and banana and blend it together until it forms a pancake consistency.
Heat up a pan and pour the mixture into the size you want and cook it on one side, waiting until small bubbles form and then flip it!
I made mine into a stack and then added kiwi fruit, blueberries heated up in the microwave and coconut milk on the top and it was delicious.
You can make chocolate pancakes by adding in some cacao powder or make a high protein meal by adding some protein powder.
You can also top it with anything you like, be creative and use fruits that you love!
